This might just be our new #MeatlessMonday fav! Here's the recipe from @thiccveges Ingredients 1 16oz block of extra firm tofu 1-2 tbs coconut oil 1 12 Oz can of full fat coconut milk 1 12 Oz can of diced tomato 1/2 red onion, sliced 1/2 green bell pepper, sliced 1/2 red bell pepper, sliced 1/2 poblano pepper, sliced 1/2 Italian green pepper, sliced 1/2 fresh jalapeño, chopped 1 scotch bonnet 6 garlic cloves, minced 1 1/2 tbs ginger, grated 3 tbs of Grace hot curry powder 1 tbs ground coriander (or whole) 1 tbs ground cumin (or whole) 1 tbs sea salt 1 tbs tumeric 1 tbs garlic powder 1 tbs onion powder 2 tbs black pepper To prep the tofu: Drain all excess water out, cut into cubes and season to your liking. I used all seasonings listed above. Either bake or pan fry until crisp and golden. For the curry: On med-high heat, heat 1-2 tbs coconut oil in a pan, add in onion and peppers, allow to caramelize for about 7 mins. Add in garlic, ginger, and all of the spices, saute for another 4 mins. Add coconut milk and a can of tomatoes and allow to simmer for another 7 mins. Add in tofu and simmer for another 10 mins until sauce thickens. Serve with rice, roti, pita, noodles, ... the choices are endless!
