Headline: Some cooking skills take serious practice. Most chefs 👨‍🍳 can learn how to plate up a passable pasta, but when it comes to a beautiful Salmon en Croûte, that's truly a work of art. A dish involving a whole side of salmon, carefully trimmed and deboned, before it’s seasoned and encased in a thin puff pastry. Then comes the cooking, which is another pressure-point. When taken out the oven, the pastry needs to be golden brown in colour and flakey in texture, with a perfectly cooked salmon sitting in the inside.

Here at FAB, we have a select team of chefs who have risen to this challenge, and a whole host of 'Salmon en Croûte' chefs in training who are working on mastering the art with them! As the weather is still yo yo-ing between cold (ish) & warm (ish), there’s never been a better time for a pie made of fish.

Chef Mick’s version honours the classic, filled with plenty of Atlantic salmon, halibut, gorgeous Fine de Claire oysters and Kinkawooka Shellfish all lightly poached in a rich braised leek & cider sauce…and of a course this Fisherman’s Pie would not be complete without that layer of hot cheesy comforting mash.
