Form a “well” in the dough and break the eggs into it. Work the dough by kneading lightly. The dough should remain soft yet firm. Sliced veggies and hearty bread charred on the grill makes for a colorful meal or side dish all summer long. The dijon dressing on these paired with the dijon micro greens give them an extra punch! Ingredients: 3 bell peppers, cut into thick strips 2 long eggplants, cut into ½ inch rounds 1 large zucchini, cut into ¼ inch rounds 1 red onion, cut into thick strips 80 Acres Farms Fireworks Tomato Mix 80 Acres Farms Dijon Microgreens 80 Acres Farms Parsley chopped 1 tablespoon olive oil ½ teaspoon sea salt Dressing: 2 tablespoons olive oil 2 tablespoons balsamic vinegar 1 teaspoon 80 Acres Farms tarragon, finely minced ½ teaspoon Dijon mustard Thick sliced bread seasoned with olive oil and garlic Preheat your BBQ to medium high and oil well. Mix all dressing ingredients together and set aside. Place the bell peppers, eggplant, zucchini, red onion and cherry tomatoes in a large bowl and toss with the olive oil and sea salt. BBQ all the veggies, working in batches if needed until there are grill marks on both sides, about 3-4 minutes per side. Toss the veggies in the dressing and salt to taste. Place the bread BBQ and grill, turning as needed until there are grill marks on all sides. Assemble the veggies on a platter and top with micro greens and parsley.
