Gul Vira FoodLover What could be better to cook for your family than a stewed goose? May be the roasted one is better for someone- but it is the matter of choice. I have a recipe for a goose stewed in a wok with the heavy botom. On low heat, the meat will simmer along with vegetables and aromatic spices, obtaining their delicious taste.
Half of the goose;
Bell pepper - 2 pc.;
tomatoes - 2 pcs.;
garlic - to taste
carrot - 2 pcs
cabbage - 1/3
potato - 6-8
salt, spices (black pepper, rosemary) - to taste;
water - 250 ml.
Put the goose in the wok (no oil!!), with greasy skin on the bottom of your wok. After the bottom is covered with the goose pieces with skin down on the work bottom, add the rest of the meat. Add chopped onion . Add salt, black pepper and spices - I have added jeera, paprika. Then lay of tomatoes, carrot, cabbage, garlic. Put on the top potato, add salt and spices again, close wok with foil, then cover your wok with lid, put on the law heat and forget for 2,5 hrs.
you can go to gym or just rest. After 2,5 hours your goose is ready

3 kashmiri red chilli, dried
7 bay leaf / tej patta
2 tbsp coriander seeds / dhaniya seeds
1 tbsp cumin / jeera
1 tbsp caraway seeds / kala jeera / shah jeera
3 mace / javitri
2 inch cinnamon stick / dalchini
1 nutmeg / jaayaphal
1 tsp cloves / lavang
3 black cardamom / badi elachi
3 star anise / chakkar phool
10 cardamom / elachi
1 tbsp pepper / kali mirch
1 tsp fennel / saunf
½ tsp turmeric / haldi
First, dry roast 3 red chilli and 7 bay leaf till they turn crisp and set aside. Then dry roast 2 tbsp coriander seeds, 1 tbsp cumin, and 1 tbsp caraway seeds till they turn aromatic. Also set aside. Now dry roast 3 mace, 2 inch cinnamon stick, 1 nutmeg, 1 tsp cloves, 3 black cardamoms, 3 star anise, 10 cardamoms, 1 tbsp pepper and 1 tsp fennel / saunf. Transfer all of it to a blender and allow to cool completely. Add 1/2 tbsp haldi. Blend it all into a fine powder.
You can store this masala. For our recipe. We will be using 1 tbsp at the beginning and 1 tbsp after.
